Description

Creamy Cajun Chicken Rotini with Garlic Mozzarella Sauce is your new go-to for a quick dinner with maximum flavor. This easy recipe blends tender Cajun-spiced chicken with spiraled rotini pasta, all coated in a luscious, garlicky mozzarella cream sauce. It’s perfect for weeknights when you want something rich and comforting but don’t have hours to cook. Whether you’re searching for easy dinner ideas, a quick comfort meal, or flavor-packed pasta recipes, this one delivers every time.

Ingredients

Scale

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

8 ounces rotini pasta

1 cup shredded mozzarella cheese

1 cup heavy cream

3 cloves garlic, minced

2 tablespoons butter

¼ cup grated parmesan cheese

1 tablespoon olive oil

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 tablespoon chopped parsley (optional, for garnish)

Instructions

1. Pat the chicken breasts dry and coat both sides evenly with Cajun seasoning. Let them rest for 10 minutes.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 5–6 minutes per side until cooked through and golden. Remove from pan and set aside to rest.

3. In a large pot, bring salted water to a boil and cook rotini until al dente (about 8–10 minutes). Drain, reserving ½ cup of pasta water.

4. In the same skillet used for the chicken, melt butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.

5. Pour in the heavy cream and stir. Let simmer for 2–3 minutes on low heat.

6. Add shredded mozzarella and grated parmesan, stirring until smooth and creamy. Season with salt and pepper to taste.

7. Add the drained pasta to the sauce and toss to coat. Use reserved pasta water as needed to loosen the sauce.

8. Slice the rested chicken breasts and place over the creamy rotini. Garnish with parsley and extra cheese, if desired.

9. Serve warm and enjoy the flavor-packed comfort!

Notes

Freshly shred your mozzarella for the smoothest, creamiest sauce—pre-shredded just doesn’t melt the same.

Letting the chicken rest after cooking helps retain the juices and keeps each slice tender.

Add a splash of reserved pasta water to adjust the sauce consistency without diluting flavor.
