Ingredients
1 pound boneless skinless chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter
3 cloves garlic minced
1 cup heavy cream
1 cup chicken broth
1 cup shredded mozzarella cheese
½ cup grated parmesan cheese
12 ounces penne pasta
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente according to package instructions. Drain and set aside.
2. Season both sides of chicken breasts with Cajun seasoning, salt, and pepper.
3. In a large skillet, heat olive oil over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and let rest.
4. In the same skillet, reduce heat to medium. Add butter and sauté garlic for 30 seconds.
