225g fettuccine pasta

2 boneless skinless chicken breasts

1 ½ tablespoons Cajun seasoning

1 tablespoon olive oil

1 tablespoon unsalted butter (for searing)

2 tablespoons unsalted butter (for sauce)

4 cloves garlic, minced

1 cup heavy cream

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons fresh chopped parsley

Salt and black pepper, to taste


Instructions

1. Pat chicken breasts dry and coat with Cajun seasoning on both sides. Let rest 10 minutes at room temp.

2. Heat olive oil and 1 tbsp butter in a skillet over medium-high. Sear chicken for 5–6 minutes per side, then remove and let rest.

3. Boil fettuccine in salted water until al dente. Reserve 1 cup pasta water, then drain.

4. In the same skillet, melt 2 tbsp butter. Add garlic and sauté for 1 minute until fragrant.

5. Pour in heavy cream and stir gently. Simmer, then add mozzarella and Parmesan. Stir until smooth and creamy.

6. Toss in cooked fettuccine, coating pasta in the sauce. Add pasta water as needed to loosen.

7. Slice chicken into strips and place on top of the pasta.

8. Garnish with fresh parsley and more Parmesan if desired.

9. Serve hot and enjoy immediately!

Use freshly grated cheese for the creamiest, smoothest sauce.

Let the cooked chicken rest before slicing to keep it juicy.

Add a splash of pasta water to loosen the sauce if it thickens too much.
