For the Pasta and Beef:
- 12 oz bowtie pasta (farfalle)
- 1 lb beef sirloin or ribeye, cut into bite-sized cubes
- Salt & pepper (to taste)
- 2 tbsp olive oil
For the Sauce:
- 2 tbsp unsalted butter
- 4 garlic cloves, finely minced
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 tsp crushed red pepper flakes (optional)
- 1/4 tsp ground nutmeg (optional)
Optional Garnish:
- Fresh parsley or thyme, chopped
- Extra Parmesan cheese
Instructions
- Boil the Pasta:
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
- Sear the Beef:
- Season beef with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear beef until browned (2-3 mins per side). Remove and set aside.
- Make the Sauce:
- In the same skillet, melt butter and add garlic. Cook for 30-45 seconds.
- Add heavy cream and deglaze the pan, then simmer for 3-4 minutes.
- Add Cheese and Spices:
- Reduce heat. Stir in Parmesan until melted.
- Add red pepper flakes and nutmeg. Season to taste.
- Combine:
- Return beef and add cooked pasta to the sauce.
- Toss to coat and simmer 1-2 minutes. Use pasta water to adjust consistency if needed.
- Serve:
- Garnish with parsley and extra Parmesan. Serve hot.
