Ingredients

Scale

8 lasagna noodles, broken into pieces

2 tablespoons unsalted butter

4 cloves garlic, minced

1 small yellow onion, finely chopped

1 can (14.5 oz) diced tomatoes, drained

4 cups low-sodium chicken broth

1 ½ cups heavy cream

1 ½ cups freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly cracked black pepper, to taste

1 tablespoon olive oil

¼ teaspoon red pepper flakes (optional)

Fresh basil, chopped (for garnish)

Instructions

1. In a large Dutch oven or heavy pot, heat olive oil and butter over medium heat. Sauté the chopped onion for 4–5 minutes until soft and translucent.

2. Add the minced garlic and cook for 30 seconds until fragrant.

3. Stir in the drained diced tomatoes, Italian seasoning, red pepper flakes, salt, and black pepper. Let simmer for 2–3 minutes.

4. Pour in the chicken broth and bring to a gentle boil.

5. Add the broken lasagna noodles and cook uncovered for 10–12 minutes, stirring occasionally.

6. Reduce heat to low and slowly stir in the heavy cream. Let it warm without boiling for 2–3 minutes.

7. Gradually add the grated Parmesan cheese while stirring continuously until fully melted and smooth.

8. Taste and adjust seasoning if needed. Thin with a splash of broth if the soup becomes too thick.

9. Serve hot, garnished with chopped fresh basil and extra Parmesan if desired.

Notes

For best results, use freshly grated Parmesan instead of pre-shredded cheese.

To keep noodles from getting soggy in leftovers, store them separately and add to soup when reheating.

Avoid boiling after adding cream to maintain a silky texture.
