8 oz goat cheese

8 oz cream cheese

1/2 cup dried cranberries, chopped

1/2 cup roasted pistachios, chopped

2 tablespoons fresh dill, chopped

1 teaspoon honey (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Let the goat cheese and cream cheese sit at room temperature for 20–30 minutes to soften.

2. In a medium bowl, blend the softened cheeses together until smooth. Add honey, salt, and pepper.

3. Fold in half of the cranberries, pistachios, and dill into the cheese mixture.

4. Scoop the mixture onto plastic wrap and form into a log shape. Wrap tightly and chill for 1 hour.

5. Spread remaining cranberries, pistachios, and dill on a plate. Unwrap and roll the chilled log in the topping mixture.

6. Press gently to coat all sides and chill again if needed before serving.

7. Serve with crackers, crostini, or fresh fruit slices.

Notes

Letting the cheese soften first makes mixing easier and gives a smooth finish.

Chill the log well to hold shape and prevent the toppings from falling off.
