Ingredients
- 4 large bell peppers (red, yellow, or orange)
- 8 oz lump crabmeat (drained)
- 8 oz raw shrimp (peeled, deveined, chopped)
- 1/2 cup breadcrumbs (Panko preferred)
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon Old Bay seasoning
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- (Optional) Pinch of red pepper flakes
- (Optional) Chopped green onions for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the bell peppers: Slice off the tops, remove seeds, brush with olive oil, and place upright in a snug baking dish.
- Make the filling: In a large mixing bowl, combine crabmeat, shrimp, breadcrumbs, mayo, Parmesan, parsley, garlic, Dijon, Old Bay, lemon zest and juice, salt, and pepper. Mix gently.
- Stuff the peppers: Evenly fill each pepper with the seafood mixture, mounding slightly above the rim.
- Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes, until lightly golden and seafood is cooked through.
- Garnish with parsley and a squeeze of fresh lemon before serving.
