1 pound ground beef

1 medium onion, chopped

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

1 can (14.5 ounces) diced tomatoes

2 tablespoons tomato paste

4 cups beef broth

2 teaspoons Italian seasoning

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons fresh parsley or basil, chopped


Instructions

1. In a skillet over medium-high heat, cook ground beef and chopped onion until browned and softened. Add garlic during the last minute. Drain excess grease.

2. Transfer the meat mixture to your slow cooker. Add crushed tomatoes, diced tomatoes, tomato paste, Italian seasoning, beef broth, salt, and pepper. Stir to combine.

3. Cover and cook on low for 6–8 hours or on high for 3–4 hours.

4. About 30 minutes before serving, add broken lasagna noodles into the slow cooker. Stir and cover again. Cook until noodles are tender.

5. Once noodles are cooked, stir in mozzarella and Parmesan until melted and creamy.

6. Serve hot, topped with a dollop of ricotta and fresh herbs.

Notes

For best texture, always add the noodles during the last 30 minutes of cooking.

Stir the cheese in at the end to maintain the soup’s creaminess and prevent curdling.

If freezing, leave out the noodles and add freshly cooked pasta when reheating.
