  • 2 cups cooked chicken, shredded
  • 3/4 cup uncooked long-grain white rice
  • 1 large lemon (zested and juiced), plus extra lemon slices for garnish
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 medium carrot, diced (optional)
  • 6 cups chicken broth
  • 2 tablespoons olive oil or butter
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large pot over medium heat, warm the olive oil or butter.
  2. Add the diced onion and sauté until translucent (about 5 minutes). Stir in garlic and cook for 30 seconds.
  3. Add the rice and stir for 1 minute to lightly toast.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender.
  6. Add the shredded chicken and lemon juice. Stir in lemon zest and a few lemon slices.
  7. Simmer for 5 more minutes, then season with salt and pepper to taste.
  8. Stir in fresh parsley before serving.
  9. Serve hot with extra lemon slices and a sprinkle of black pepper.
