- 2 cups cooked chicken, shredded
- 3/4 cup uncooked long-grain white rice
- 1 large lemon (zested and juiced), plus extra lemon slices for garnish
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 1 medium carrot, diced (optional)
- 6 cups chicken broth
- 2 tablespoons olive oil or butter
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- In a large pot over medium heat, warm the olive oil or butter.
- Add the diced onion and sauté until translucent (about 5 minutes). Stir in garlic and cook for 30 seconds.
- Add the rice and stir for 1 minute to lightly toast.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender.
