Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1/2 cup powdered sugar
1 cup heavy whipping cream
1/2 cup hot chocolate mix
1 tsp vanilla extract
1/2 cup semi-sweet chocolate chips
2 tbsp heavy cream
1 tbsp cocoa powder
1/2 cup mini marshmallows
Instructions
1. Mix graham cracker crumbs, sugar, and melted butter. Press into a parchment-lined 8×8-inch pan. Chill for 20–30 minutes.
2. Beat cream cheese until smooth. Add powdered sugar and hot chocolate mix, and mix again.
3. Whip heavy cream until stiff peaks form. Fold into the cream cheese mixture with vanilla.
4. Spread the filling evenly over the chilled crust.
5. Melt chocolate chips with heavy cream until smooth. Drizzle over the top and swirl with a toothpick.
6. Cover and chill for at least 4 hours or overnight.
7. Dust with cocoa powder, top with mini marshmallows. Slice and serve.
