  • 1 cup full-fat cottage cheese
  • 1/2 cup shredded cheddar cheese (or your favorite)
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • Optional: 1 cup cooked veggies, meats, or herbs of choice
  • Cooking spray or butter (for greasing the muffin tin)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin generously.
  2. In a blender, combine eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
  3. Distribute any optional mix-ins into the bottom of each muffin cup.
  4. Pour the blended egg mixture into each cup, filling about 3/4 of the way.
  5. Bake for 22–25 minutes, or until set in the center and lightly golden.
