  • ½ teaspoon salt
  • 2 cups cornflakes (lightly crushed)
  • ¾ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Flaky sea salt (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  3. Add egg and vanilla; mix until smooth.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Gradually mix dry ingredients into the wet until just combined.
  6. Gently fold in crushed cornflakes with a spatula.
  7. Scoop dough onto prepared baking sheets, spacing cookies 2 inches apart.
  8. Optionally press slightly and sprinkle with sea salt.
  9. Bake 10–12 minutes, or until edges are golden and centers are soft.
  10. Cool on tray 5 minutes, then transfer to a wire rack.
