100 g brown sugar

3 large eggs

2 tsp vanilla extract

100 g all-purpose flour

50 g unsweetened cocoa powder

1/4 tsp salt

225 g cream cheese, softened

60 g powdered sugar

1/2 tsp vanilla extract (for cream cheese layer)

10 Oreo cookies, crushed (plus a few more for topping)


Instructions

1. Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper, leaving overhang for easy removal. Grease lightly.

2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until glossy.

3. Add eggs and vanilla extract to the mixture and beat until fully incorporated.

4. Fold in flour, cocoa powder, and salt until just combined and the batter is thick.

5. In another bowl, beat cream cheese with powdered sugar and vanilla until smooth and creamy.

6. Spread half the brownie batter into the prepared pan evenly.

7. Gently spread the cream cheese layer on top of the brownie layer.

8. Top with the remaining brownie batter, spreading carefully to cover the cream layer.

9. Crush Oreo cookies and sprinkle over the top, pressing them lightly into the batter.

10. Bake for 35–40 minutes, until the edges are set and a toothpick comes out with moist crumbs.

11. Let cool completely in the pan. For best results, chill for 30 minutes before slicing.
