1 lb boneless skinless chicken breast

2 tablespoons cornstarch

1 tablespoon vegetable oil

1 cup cooked wild rice

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 cup broccoli florets

1/2 cup snap peas

1/2 cup chopped carrots

1/4 cup green peas

2 tablespoons chopped scallions

fresh cilantro or sesame seeds (optional)

1/4 cup low-sodium soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 garlic clove, minced

1 teaspoon fresh grated ginger

1 tablespoon cornstarch mixed with 2 tablespoons cold water


Instructions

1. Pat chicken dry and toss with cornstarch in a bowl. Chop all vegetables and have wild rice cooked and chilled.

2. Whisk together soy sauce, honey, vinegar, sesame oil, garlic, and ginger. Mix cornstarch and water separately to make a slurry.

3. Heat oil in a large wok or skillet. Cook chicken for 5–7 minutes until golden and cooked through. Remove from pan.

4. In the same pan, stir-fry bell peppers, carrots, snap peas, and broccoli for 4–5 minutes. Add green peas last and cook 1–2 more minutes.

5. Return chicken to the pan. Pour in the teriyaki sauce and stir. Simmer 2 minutes, then add slurry. Cook until sauce thickens.

6. Fold in the wild rice gently and heat through for another 1–2 minutes.

7. Top with scallions, sesame seeds, or cilantro. Serve hot or portion into containers for meal prep.

Notes

Use chilled or day-old rice to prevent mushiness when stir-frying.
