1 ¾ cups all-purpose flour
1 teaspoon baking powder

¾ cup unsalted butter, room temperature
½ cup granulated sugar
¼ cup brown sugar
1 large egg
1 teaspoon vanilla extract
¾ cup powdered sugar (for glaze)
1 to 2 tablespoons milk or cream (for glaze)
½ teaspoon instant espresso powder (optional for glaze)
Instructions
1. In a medium bowl, whisk together flour, baking powder, salt, and espresso powder.
2. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
3. Add egg and vanilla extract; beat until fully combined.
4. Gradually mix in dry ingredients until just combined. Do not overmix.
5. Cover dough and chill in the fridge for at least 30 minutes.
6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
7. Scoop dough into 2-tablespoon balls and place on baking sheet, spaced 2 inches apart.
8. Bake for 10–12 minutes until edges are set and centers look slightly underbaked.
9. Let cool on tray for 5 minutes, then transfer to a wire rack to cool completely.
10. For glaze, whisk powdered sugar, optional espresso powder, and milk until smooth.
11. Drizzle glaze over cooled cookies and allow to set for 15–20 minutes before serving.
