1/3 cup brown sugar (for crumble)

1/3 cup all-purpose flour (for crumble)

1/2 teaspoon ground cinnamon (for crumble)

3 tablespoons unsalted butter (cold, cubed – for crumble)

1/2 cup powdered sugar (for glaze)

12 tablespoons milk or cream (for glaze)


Instructions

1. Make the crumble topping by combining brown sugar, flour, cinnamon, and cold butter. Mix with a fork or fingers until crumbly, then chill.

2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.

3. In a large bowl, cream softened butter with both sugars until light and fluffy.

4. Beat in the egg and vanilla extract until fully combined.

5. Gradually mix in dry ingredients until just combined — don’t overmix.

6. Scoop dough onto a lined baking sheet using a 2-tablespoon scoop and flatten slightly.

7. Press chilled crumble onto each dough ball generously.

8. Bake at 350°F (175°C) for 10–12 minutes until edges are golden and centers are just set.

9. Let cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

10. Drizzle cooled cookies with glaze made from powdered sugar and milk or cream.

Notes

Use cold butter in the crumble to get the perfect texture.

Slightly underbake cookies for the best chewy center.

Let cookies fully cool before adding glaze to prevent it from melting off.
