Ingredients
- 4 cups green cabbage, finely shredded
- 2 cups purple (red) cabbage, finely shredded
- 2 carrots, peeled and grated
- ¾ cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1½ tablespoons sugar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh parsley (optional), chopped

Prepare the Vegetables
Finely shred the green and purple cabbage. Grate the carrots. Place all vegetables in a large mixing bowl. -
Make the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth. -
Combine
Pour the dressing over the cabbage and carrot mixture. Gently toss to coat all vegetables evenly. -
Chill
