Ingredients

  • 3 cups finely chopped green cabbage
  • 1 cup finely diced carrot
  • 1 cup mayonnaise
  • 1/3 cup low-fat Greek yogurt
  • 1/4 cup apple cider vinegar
  • 1 teaspoon celery seed
  • 1 teaspoon sugar or honey
  • Kosher salt and freshly ground black pepper, to tast

Instructions

  1. In a large bowl, toss together the finely chopped cabbage and diced carrot until well combined. Set aside.
  2. In a medium bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, celery seed, and sugar until smooth. Season with kosher salt and ground black pepper, to taste.
  3. Pour the dressing over the cabbage and carrot mixture, stirring well to coat all the vegetables evenly.
  4. Serve immediately, or store in an airtight container in the refrigerator until ready to serve.

Notes

  • For the best texture, make sure to use fresh cabbage and carrots. You can also prepare the dressing ahead of time and store it separately to keep the vegetables crisp until serving.
