  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/2 teaspoon garlic powder

  • 1/2 cup grape tomatoes (optional, halved)

Instructions

  1. Cook the Chicken: Boil, bake, or grill the chicken until fully cooked. If using rotisserie chicken, shred it into bite-sized pieces.
  2. Prepare the Vegetables: Chop the celery, finely dice the red onion, and halve the grape tomatoes (if using). Chop the fresh parsley.
  3. Make the Dressing: In a large mixing bowl, combine mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Whisk together until smooth.
  4. Combine the Ingredients: Add the shredded chicken, chopped vegetables, and fresh parsley to the bowl with the dressing. Stir gently until everything is well coated.
  5. Chill and Serve: Refrigerate for at least 30 minutes to allow the flavors to meld. Serve on a bed of lettuce, in a sandwich, or with crackers.
