Instructions
1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners. Lightly grease the liners.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
3. In a separate bowl, beat the eggs and sugar, then add melted butter, milk, and vanilla. Mix until smooth.
4. Fold the wet ingredients into the dry mixture, stirring gently until just combined.
5. In a small bowl, mix ⅓ cup brown sugar with 1 tsp cinnamon to create the filling.
