1 packet taco seasoning (about 2 tablespoons)

1/2 cup sour cream

1/2 cup diced red bell pepper

1/2 cup sliced green onions

1/4 cup chopped cilantro

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

1/4 teaspoon chili powder

Salt and black pepper to taste

1 cup crushed nacho cheese chips (optional)

Chopped tomatoes, cilantro, and green onions for garnish

Extra paprika or chili powder for dusting

Tortilla chips or crackers, for serving


Instructions

1. In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy.

2. Add the taco seasoning, garlic powder, smoked paprika, salt, and pepper. Mix well.

3. Fold in the shredded cheddar cheese and optional crushed nacho cheese chips.

4. Stir in the diced red bell pepper, green onions, and chopped cilantro.

5. Line a bundt pan or ring mold with plastic wrap and spoon in the mixture, pressing firmly.

6. Cover with the overhanging plastic wrap and chill in the fridge for 1–2 hours or overnight.

7. Unmold onto a serving plate and remove the plastic wrap.

8. Dust lightly with paprika or chili powder. Garnish with chopped tomatoes, cilantro, and green onions.

9. Serve with tortilla chips, crackers, or sliced vegetables.

Notes

Make sure to chill the cheese ball long enough — at least 2 hours — so it holds its wreath shape.
