These Christmas Rocks are a delightful holiday treat packed with chewy dried fruits, crunchy nuts, and a hint of warm spice. Perfect for festive gatherings, holiday gifting, or enjoying with a cozy drink, these cookies are as easy to make as they are beautiful to serve.

Ingredients

Scale
  • 1 cup dried cranberries
  • 1/2 cup dried cherries
  • 1/2 cup raisins
  • 1 cup chopped nuts (almonds, walnuts, or pecans)
  • 1 1/2 cups all-purpose flour
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Chop the dried fruits and nuts into small, even pieces. Set aside.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. In a separate bowl, whisk together the flour, cinnamon, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped dried fruits and nuts until evenly distributed.
  7. Scoop tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart. Flatten slightly with the back of a spoon.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely. Serve and enjoy!
