These Chocolate Covered Dates are a delicious no-bake treat made with naturally sweet Medjool dates, rich melted chocolate, and your choice of crunchy or creamy fillings. They’re perfect for gifting, parties, or a guilt-free dessert option.

- 15 large Medjool dates, pitted
- 1 cup dark chocolate chips or chopped chocolate
- 1 tsp coconut oil (optional)
- 2 tbsp crushed pistachios
- 2 tbsp chopped almonds or hazelnuts
- 2 tbsp shredded coconut (unsweetened)
- Nut butter or whole nuts (optional, for stuffing)
- Optional: sea salt flakes, chili flakes, or rose petals for garnish
Instructions
- Slice each date on one side and remove the pit. If desired, stuff with nut butter or a whole nut.
- Melt chocolate (and coconut oil if using) in a microwave-safe bowl or double boiler until smooth.
- Dip each date in the melted chocolate, coating fully or partially.
- Place dipped dates on a parchment-lined tray.
- Immediately top with pistachios, almonds, coconut, or other garnishes.
- Chill in the refrigerator for 10–15 minutes until the chocolate sets.
- Serve or store in an airtight container.
