Ingredients

Scale

1 cup grated zucchini (moisture squeezed out)

1 1/2 cups all-purpose flour

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

3/4 cup semi-sweet chocolate chips

Instructions

1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease it lightly.

2. Grate the zucchini using the fine side of a box grater. Squeeze out excess moisture using a clean towel or cheesecloth.

3. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.

4. Add the egg and vanilla extract to the sugar mixture and whisk until fully combined.

5. Add flour, baking soda, salt, and cinnamon (if using) to the bowl. Stir gently until just combined—don’t overmix.

6. Fold in the grated zucchini and chocolate chips evenly.

7. Pour the batter into the prepared pan and smooth the top.

8. Bake for 25–30 minutes, until the edges are golden and a toothpick comes out with a few moist crumbs.

9. Cool the bars completely in the pan before slicing into squares.

10. Enjoy immediately or store as directed below.

Notes

Always drain the zucchini well to avoid soggy bars.

For added depth, sprinkle sea salt on top before baking.

Let the bars cool completely before slicing for best texture.
