- Salt & black pepper to taste
- 1 cup cooked rice (white or cilantro-lime rice)
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup chopped fresh cilantro
- 1/4 cup mayonnaise or Greek yogurt
- 1/4 cup sour cream
- 1 tbsp lime juice
- 1/2 tsp chipotle powder (for sauce)
- Optional: extra lime wedges for serving
Instructions
- In a bowl, mix olive oil, chipotle powder, smoked paprika, garlic powder, cumin, brown sugar, salt, and pepper.
- Coat the chicken breasts in the mixture and marinate for at least 15 minutes.
- Heat a grill pan or skillet over medium-high heat and cook chicken 5–6 minutes per side until fully cooked. Rest before slicing.
