Ingredients

1 lb chicken thighs or breasts

2 medium zucchini

3 cloves garlic, minced

1 inch fresh ginger, minced

3 tbsp soy sauce

2 tbsp oyster sauce

1 tsp sesame oil

2 tsp cornstarch

1 tbsp brown sugar or honey

1 tsp red chili or chili flakes (optional)

2 green onions, sliced

1 tbsp sesame seeds

2 tbsp vegetable oil

2 tbsp water


Instructions

1. Slice chicken into thin strips and marinate with 1 tbsp soy sauce, 1 tsp cornstarch, and 1/2 tsp sesame oil for 10–15 minutes.

2. Slice zucchini into 1/4-inch thick half-moons and set aside.

3. In a bowl, mix remaining soy sauce, oyster sauce, brown sugar, water, and sesame oil to make the sauce.

4. Heat 1 tbsp oil in a wok or skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.

5. Add remaining oil to the pan, sauté garlic and ginger for 30 seconds until fragrant.

6. Add zucchini and stir-fry for 3–4 minutes until slightly tender but still crisp.

7. Return chicken to the pan, pour in the sauce, and toss to coat. Let it cook for another 1–2 minutes until the sauce thickens.

8. Turn off the heat. Garnish with green onions, sesame seeds, and chili flakes if using. Serve hot.

Notes

Slice chicken and zucchini uniformly to ensure even cooking.

Cook over high heat for that perfect stir-fry texture.

Adjust chili level to your spice preference or omit for a mild version.
