  • 1 ½ lbs boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 small corn tortillas
  • ½ cup red onion, finely diced
  • ½ cup fresh cilantro, chopped
  • Lime wedges for serving
  • Salsa or hot sauce (optional)

Instructions

  1. In a bowl, mix olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and pepper to create the marinade.
  2. Place the chicken in a bowl or resealable bag, pour the marinade over it, and coat well. Marinate for at least 30 minutes (or up to 4 hours for deeper flavor).
  3. Heat a large skillet or grill pan over medium-high heat. Cook the marinated chicken for 5-7 minutes per side, or until fully cooked and slightly charred. Internal temperature should reach 165°F (75°C).
  4. Let the chicken rest for 5 minutes, then chop it into small pieces.
  5. Warm the corn tortillas in a dry skillet or over an open flame until slightly charred.
  6. Assemble the tacos by filling each tortilla with chopped chicken, diced red onion, and fresh cilantro.
  7. Serve with lime wedges and your favorite salsa or hot sauce. Enjoy warm!
