- 1 ½ lbs boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 3 tbsp fresh lime juice
- 3 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 8 small corn tortillas
- ½ cup red onion, finely diced
- ½ cup fresh cilantro, chopped
- Lime wedges for serving
- Salsa or hot sauce (optional)
Instructions
- In a bowl, mix olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and pepper to create the marinade.
- Place the chicken in a bowl or resealable bag, pour the marinade over it, and coat well. Marinate for at least 30 minutes (or up to 4 hours for deeper flavor).
- Heat a large skillet or grill pan over medium-high heat. Cook the marinated chicken for 5-7 minutes per side, or until fully cooked and slightly charred. Internal temperature should reach 165°F (75°C).
- Let the chicken rest for 5 minutes, then chop it into small pieces.
- Warm the corn tortillas in a dry skillet or over an open flame until slightly charred.
- Assemble the tacos by filling each tortilla with chopped chicken, diced red onion, and fresh cilantro.
- Serve with lime wedges and your favorite salsa or hot sauce. Enjoy warm!
