For the Chicken Scampi:
- 1.5 lbs boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tablespoons chopped fresh parsley (for garnish)
For the Garlic Parmesan Rice:
- 1 cup long-grain white rice
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 1/4 cups chicken broth
- 1/3 cup freshly grated Parmesan cheese
- Salt, to taste
- Optional: a splash of cream for extra richness
Instructions
- Sear the Chicken: In a large skillet, heat olive oil and 1 tbsp butter over medium-high. Add chicken, season with salt, pepper, and Italian seasoning. Sear for 3–4 minutes per side until golden and cooked through. Remove and set aside.
- Sauté Garlic and Toast Rice: Lower heat to medium. Add remaining butter and garlic to the skillet. Sauté 1 minute. Stir in rice and cook for 2–3 minutes.
- Simmer Rice: Pour in chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes. Let rest 5 minutes off heat.
- Finish the Rice: Stir in Parmesan and a splash of cream if using. Season with salt to taste.
- Prepare the Scampi Sauce: Return chicken to the skillet. Add lemon juice, zest, and red pepper flakes. Stir and heat through.
- Serve: Sprinkle with fresh parsley and serve hot.
