- 1 lb boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Pinch of chili flakes (optional)
- Salt and pepper to taste
- 2 cups cooked white rice (jasmine or basmati preferred)
- 1 ripe avocado, diced
- 1 large tomato, diced
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
Instructions
- In a bowl, mix olive oil, garlic, cumin, paprika, chili flakes, salt, and pepper. Add the chicken and toss to coat. Marinate for at least 20 minutes.
- Cook the rice and set aside, fluffing with a fork.
- Heat a grill pan or skillet over medium-high heat. Cook the chicken for about 5–6 minutes per side until fully cooked. Let it rest for 5 minutes, then slice.
- Dice the avocado and tomato, and chop the cilantro. Cut the lime into wedges.
- Assemble the bowl: Add rice as the base, top with sliced chicken, avocado, tomato, and cilantro. Finish with a squeeze of lime.
- Optional: Add sauce, cheese, or extra toppings of your choice.
