- 2 cloves garlic, minced
- 2 pounds boneless, skinless chicken thighs or breasts, cut into chunks
- 2 tablespoons Hungarian sweet paprika
- 1 tablespoon tomato paste
- 1 cup chicken broth
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 3/4 cup sour cream (plus extra for serving, optional)
- 1 tablespoon all-purpose flour (optional, for thickening)
- Fresh chopped parsley (optional)
- Egg noodles, spaetzle, rice, or mashed potatoes for serving
Instructions
- Pat chicken dry and season with salt and pepper.
- Heat oil in a large skillet or Dutch oven over medium-high heat.
- Sear chicken in batches until golden brown; remove and set aside.
- Lower heat to medium and sauté chopped onions until golden and soft.
- Add minced garlic and cook for 30 seconds until fragrant.
- Remove pan from heat and stir in paprika and tomato paste.
- Return pan to heat, add chicken back in, and pour in chicken broth.
- Bring to a simmer, cover, and cook for 20–25 minutes.
- In a small bowl, temper sour cream with a few tablespoons of hot broth.
- Stir the tempered sour cream (and flour, if using) into the sauce.
- Simmer gently, uncovered, for 5–10 more minutes until thickened.
