  • 2 tablespoons vegetable oil or butter
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 pounds boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tablespoons Hungarian sweet paprika
  • 1 tablespoon tomato paste
  • 1 cup chicken broth
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 3/4 cup sour cream (plus extra for serving, optional)
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • Fresh chopped parsley (optional)
  • Egg noodles, spaetzle, rice, or mashed potatoes for serving

Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. Heat oil in a large skillet or Dutch oven over medium-high heat.
  3. Sear chicken in batches until golden brown; remove and set aside.
  4. Lower heat to medium and sauté chopped onions until golden and soft.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Remove pan from heat and stir in paprika and tomato paste.
  7. Return pan to heat, add chicken back in, and pour in chicken broth.
  8. Bring to a simmer, cover, and cook for 20–25 minutes.
  9. In a small bowl, temper sour cream with a few tablespoons of hot broth.
  10. Stir the tempered sour cream (and flour, if using) into the sauce.
  11. Simmer gently, uncovered, for 5–10 more minutes until thickened.
  12. Adjust seasoning and serve over noodles, rice, or potatoes with fresh parsley.
