Ingredients
2 cups cooked shredded chicken
2 cups frozen mixed vegetables
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 cup shredded cheddar cheese
2 cups biscuit mix (like Red Lobster or Bisquick)
1 cup milk
1/2 cup melted butter
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 tablespoon chopped parsley (optional, for garnish)
Instructions
1. Preheat the oven to 350°F (175°C).
2. Grease a 9×13-inch baking dish with non-stick spray or butter.
3. Evenly layer the shredded chicken in the bottom of the dish.
4. Scatter the frozen vegetables over the chicken.
5. Mix the cream of chicken soup and chicken broth until smooth, then pour over the vegetables.
6. Sprinkle shredded cheese evenly over the soup mixture.
7. In a separate bowl, combine the biscuit mix and milk; stir until just combined.
8. Spoon the biscuit batter gently over the casserole and spread evenly.
9. Drizzle melted butter over the biscuit topping.
10. Bake for 45–50 minutes or until golden and bubbly.
11. Let rest for 10 minutes before serving.
Notes
Use freshly shredded cheddar for the best melt and flavor.
Let the casserole rest after baking to help it set.
Red Lobster biscuit mix adds extra seasoning, but plain biscuit mix with garlic and herbs works great too.
