Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups cooked white or brown rice
  • 1 cup canned black beans, rinsed and warmed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 large ripe avocado
  • Juice of 1 lime (plus wedges for serving)
  • 1/2 cup diced tomato
  • 1/4 cup sour cream or Greek yogurt
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a bowl, toss chicken pieces with olive oil, paprika, cumin, chili powder, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat. Cook the chicken for 6-8 minutes, stirring occasionally, until fully cooked and lightly seared. Set aside.
  3. While chicken cooks, warm rice and black beans separately.
  4. In a small bowl, mash the avocado with lime juice and a pinch of salt to make guacamole.
  5. Assemble bowls: divide rice among bowls, top with black beans, corn, chicken, diced tomato, a scoop of guacamole, and sour cream.
  6. Garnish with chopped cilantro and serve with lime wedges.
