- 1 lb boneless, skinless chicken breasts or thighs
- 1 cup pearled barley
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 6 cups chicken broth
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté for 5 minutes until soft.
- Add garlic, rosemary, and thyme, cooking for an additional 1-2 minutes until fragrant.
- Add chicken and barley to the pot. Stir to combine.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove the chicken from the pot, shred it, and return it to the soup.
- Season with salt and pepper to taste, and serve hot.
