  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup pearled barley
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 6 cups chicken broth
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté for 5 minutes until soft.
  2. Add garlic, rosemary, and thyme, cooking for an additional 1-2 minutes until fragrant.
  3. Add chicken and barley to the pot. Stir to combine.
  4. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Remove the chicken from the pot, shred it, and return it to the soup.
  6. Season with salt and pepper to taste, and serve hot.
