  • 2 large chicken breasts (or 4 thighs), cut into bite-sized pieces
  • 6 cups fresh spinach (or 10 oz frozen, thawed and drained)
  • 1 tablespoon olive oil or butter
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 8 oz cream cheese, softened
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a medium-sized baking dish.
  2. Season the chicken with salt, pepper, and Italian seasoning. In a skillet, heat olive oil and cook chicken until lightly browned, about 5-6 minutes. Set aside.
  3. In the same skillet, sauté diced onion until soft. Add garlic and cook for 30 seconds.
  4. Add spinach and cook until wilted. Stir in the cream cheese and mix until smooth and creamy.
  5. Return the chicken to the skillet and combine everything well.
  6. Transfer the mixture to the baking dish and sprinkle mozzarella cheese on top.
  7. Bake for 20-25 minutes until cheese is melted and lightly browned.
  8. Let rest for 5 minutes before serving.
