Description

Chewy Special K Bars are a no-bake dessert made with crispy cereal, creamy peanut butter, a sticky-sweet syrup, and a rich chocolate topping. They’re quick, easy, and incredibly addictive—perfect for sharing or keeping all to yourself!

  • 6 cups Special K cereal
  • 1 cup creamy peanut butter (no-stir variety)
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons butter (optional, for smoother chocolate topping)
  • Pinch of flaky sea salt (optional, for garnish)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. Add the Special K cereal to a large mixing bowl and set aside.
  3. In a medium saucepan over medium heat, combine the sugar and corn syrup. Stir constantly until the mixture starts to bubble.
  4. Remove from heat immediately and stir in the peanut butter and vanilla until smooth.
  5. Pour the peanut butter mixture over the cereal and quickly stir to coat evenly.
  6. Press the mixture firmly into the prepared pan using a greased spatula or wax paper.
  7. Melt the chocolate chips and butter (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Pour the melted chocolate over the cereal layer and spread evenly.
  9. Allow to cool at room temperature or refrigerate until the chocolate is set.
  10. Cut into squares and serve.
