Chewy Special K Bars are a no-bake dessert made with crispy cereal, creamy peanut butter, a sticky-sweet syrup, and a rich chocolate topping. They’re quick, easy, and incredibly addictive—perfect for sharing or keeping all to yourself!

- 6 cups Special K cereal
- 1 cup creamy peanut butter (no-stir variety)
- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 2 tablespoons butter (optional, for smoother chocolate topping)
- Pinch of flaky sea salt (optional, for garnish)
Instructions
- Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- Add the Special K cereal to a large mixing bowl and set aside.
- In a medium saucepan over medium heat, combine the sugar and corn syrup. Stir constantly until the mixture starts to bubble.
- Remove from heat immediately and stir in the peanut butter and vanilla until smooth.
- Pour the peanut butter mixture over the cereal and quickly stir to coat evenly.
- Press the mixture firmly into the prepared pan using a greased spatula or wax paper.
- Melt the chocolate chips and butter (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Pour the melted chocolate over the cereal layer and spread evenly.
- Allow to cool at room temperature or refrigerate until the chocolate is set.
- Cut into squares and serve.
