1 medium yellow onion, chopped

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

2 tablespoons tomato paste

4 cups chicken or vegetable broth

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

10 ounces cheese tortellini (fresh or frozen)

1/2 cup grated parmesan cheese

2 tablespoons chopped fresh basil or parsley


Instructions

1. Heat olive oil in a large soup pot over medium heat. Add chopped onion and sauté for 5 minutes until soft.

2. Stir in minced garlic and cook for 1 more minute.

3. Add crushed tomatoes and tomato paste, stir to combine, and simmer for 5–7 minutes.

4. Pour in chicken or vegetable broth. Add Italian seasoning, salt, and pepper. Bring to a boil.

5. Add tortellini and cook according to package directions—4–6 minutes for fresh, 8–10 minutes for frozen.

6. Reduce heat to low, stir in heavy cream, and let simmer for 3–5 more minutes.

7. Stir in parmesan cheese and chopped herbs. Taste and adjust seasoning.

8. Serve hot with extra cheese and black pepper if desired.

Notes

Add cream slowly over low heat to prevent curdling.

For best texture, do not overcook the tortellini.

Freeze the soup base without cream or tortellini for best storage results.
