  • 1 lb sirloin, ribeye, or flank steak, cubed
  • 8 oz rotini pasta (or your preferred short pasta)
  • 1 cup beef broth
  • 1 tbsp Cajun seasoning
  • 1 tsp chili powder
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese (or pepper jack)
  • 2 tbsp butter or olive oil for cooking
  • Salt and pepper, to taste
  • 2 cloves garlic, minced (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini and cook according to package directions until al dente. Drain and set aside.
  2. Sear the Steak: Heat butter or olive oil in a large skillet over medium-high heat. Add the cubed steak, season with Cajun seasoning, salt, and pepper, and sear for 2-3 minutes per side until browned. Remove steak from the skillet and set aside.
  3. Make the Sauce: In the same skillet, add the beef broth and stir, scraping up any browned bits. Add the Cajun seasoning and chili powder, then stir in the heavy cream. Let it simmer for 2-3 minutes until slightly thickened.
  4. Add the Cheese: Lower the heat and add shredded cheese gradually, stirring until fully melted and smooth.
  5. Combine: Add the cooked pasta to the skillet, tossing it to coat in the cheesy sauce. Gently stir in the seared steak pieces and let everything warm through for a couple of minutes.
