Ingredients
1 ½ cups warm water
2 ¼ teaspoons active dry yeast
1 tablespoon granulated sugar
1 teaspoon salt
1 tablespoon unsalted butter, melted
4 cups all-purpose flour
8 sticks mozzarella cheese (or cut block cheese)
⅓ cup baking soda
1 egg, beaten
2 tablespoons coarse sea salt
2 tablespoons chopped fresh parsley or chives (optional)
Instructions
1. In a large bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
2. Add melted butter and salt. Gradually stir in flour until dough forms.
3. Knead on a floured surface for 8 minutes until smooth and elastic.
4. Place dough in a greased bowl, cover, and let rise for 1 hour until doubled in size.
5. Cut mozzarella into sticks or prepare string cheese.
6. Boil 8 cups of water and add ⅓ cup baking soda for the pretzel bath.
7. Preheat oven to 425°F (220°C).
8. Punch down dough and divide into 8 equal pieces.
9. Roll each into a rope, flatten, place cheese inside, and seal well. Shape into pretzels.
10. Dip each pretzel in the baking soda bath for 30 seconds.
11. Place on lined baking sheet. Brush with egg wash and sprinkle with coarse salt.
12. Bake for 12–15 minutes until golden brown.
13. Brush with melted butter and sprinkle parsley or chives on top if desired. Serve warm.
Notes
Use low-moisture mozzarella to avoid soggy pretzels.
Be sure to seal the dough completely around the cheese to prevent leaks.
Dipping in baking soda bath is crucial for color and texture — don’t skip it.
