Ingredients
- 1 lb ground beef
- 4 medium potatoes (Yukon Gold or russet), peeled and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups milk
- 2 cups shredded cheddar cheese (plus extra for garnish)
- 2 tbsp butter
- 2 tbsp flour (optional, for thickening)
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
-
In a large soup pot, cook ground beef over medium heat until browned. Drain excess grease and set beef aside.
-
In the same pot, melt butter. Add diced onion and cook for 3–4 minutes until soft. Stir in minced garlic and cook for 30 seconds.
-
Return beef to the pot. Add diced potatoes and beef broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15–20 minutes, or until potatoes are tender.
-
If thickening, whisk flour with a small amount of milk and stir into the soup. Simmer a few more minutes to thicken.
-
Reduce heat to low. Gradually stir in shredded cheese until melted. Add milk and stir gently to combine. Warm soup through without boiling.
-
Season with salt and pepper to taste.
-
Serve hot, garnished with extra cheese and fresh parsley if desired.
