Cheesy Hamburger Potato Soup is a hearty, comforting one-pot meal packed with seasoned ground beef, tender potatoes, and melty cheddar cheese. It’s quick to make, family-friendly, and perfect for chilly nights or anytime you need a cozy bowl of goodness.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes (Yukon Gold or russet), peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups milk
  • 2 cups shredded cheddar cheese (plus extra for garnish)
  • 2 tbsp butter
  • 2 tbsp flour (optional, for thickening)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large soup pot, cook ground beef over medium heat until browned. Drain excess grease and set beef aside.

  2. In the same pot, melt butter. Add diced onion and cook for 3–4 minutes until soft. Stir in minced garlic and cook for 30 seconds.

  3. Return beef to the pot. Add diced potatoes and beef broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15–20 minutes, or until potatoes are tender.

  4. If thickening, whisk flour with a small amount of milk and stir into the soup. Simmer a few more minutes to thicken.

  5. Reduce heat to low. Gradually stir in shredded cheese until melted. Add milk and stir gently to combine. Warm soup through without boiling.

  6. Season with salt and pepper to taste.

  7. Serve hot, garnished with extra cheese and fresh parsley if desired.
