Ingredients
1 (32-ounce) bag frozen hash brown potatoes
1 (10.5-ounce) can cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese, divided

1/2 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups crushed cornflakes or potato chips (optional topping)
2 tablespoons melted butter (for topping)
2 tablespoons chopped chives or parsley (for garnish, optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray or butter.
