  • 1 medium head of green cabbage, sliced thin
  • 3 tablespoons butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese (or combination of cheddar, Gruyère, or mozzarella)
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)
  • Fresh thyme or parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Slice the cabbage into thin strips, discarding the tough outer leaves. Rinse thoroughly and set aside.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the cabbage and sauté for about 5-7 minutes, until softened but still slightly crisp. Season with salt and pepper. Remove from heat.
  4. In a saucepan, melt the remaining 1 tablespoon of butter over medium heat. Add the chopped onion and cook for about 4 minutes until softened. Add garlic and cook for 1 more minute.
  5. Pour in the heavy cream and stir to combine. Let the mixture simmer for 2-3 minutes to thicken slightly. Season with salt, pepper, and nutmeg (if using).
  6. In the greased baking dish, layer the sautéed cabbage. Pour the creamy sauce over the cabbage, then sprinkle with 1 1/2 cups of shredded cheese. Add a little extra cheese on top if desired.
  7. Cover the dish with foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes until the cheese is melted and golden. For a crispy top, broil for 1-2 minutes at the end.
  8. Let the casserole sit for 5 minutes before serving. Sprinkle with fresh thyme or parsley for extra flavor and color.
