  • 1 package (20 oz) cheese tortellini (refrigerated or thawed if frozen)
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup shredded mozzarella (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Optional garnishes: chopped cilantro, green onions

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add ground beef and break it apart; cook until browned, about 6–8 minutes.

  3. Season with cumin, garlic powder, onion powder, salt, and pepper.

  4. Stir in enchilada sauce and beef broth. Let it simmer on medium heat for 5 minutes.

  5. Add sour cream and mix until smooth and creamy.

  6. Stir in tortellini and cover. Cook for 5–7 minutes, stirring occasionally.

  7. Sprinkle shredded cheese over the top and cover again until melted.
