12 oz rigatoni pasta
1 lb ground beef
1 small yellow onion, diced
2 cloves garlic, minced
2 tbsp tomato paste
1 cup beef broth

1 tbsp yellow mustard
1/2 cup heavy cream
2 cups shredded cheddar cheese
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped fresh parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook pasta until al dente, then drain and set aside.
2. In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess fat.
3. Add diced onion and sauté for 3–4 minutes until soft. Stir in minced garlic and cook for 1 more minute.
4. Stir in tomato paste, ketchup, and mustard. Cook for 2 minutes.
5. Pour in beef broth and mix well. Simmer for 3 minutes.
6. Reduce heat to low and stir in heavy cream. Gradually add shredded cheese, stirring until smooth.
7. Season with salt and pepper. Taste and adjust as needed.
8. Add cooked pasta to the skillet and stir to coat with sauce. Simmer for 2–3 minutes.
9. Optional: transfer to a baking dish, top with extra cheese, and broil for 2–3 minutes until bubbly.
10. Garnish with parsley if using, and serve hot.
