  • 1/2 cup unsalted butter
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup grated cheese (cheddar, Gruyère, mozzarella, or a mix)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Fresh herbs like thyme or rosemary (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, melt the butter and milk over medium heat. Stir occasionally until the butter is fully melted and the mixture begins to simmer. Remove from heat.
  3. Add the flour, salt, pepper, garlic powder, and baking powder to the saucepan. Stir vigorously until the mixture forms a dough.
  4. Allow the dough to cool for a minute or two. Add the eggs, one at a time, mixing well after each addition until smooth and shiny.
  5. Stir in the grated cheese until evenly distributed.
  6. Using a spoon or piping bag, drop spoonfuls of dough (about 1 1/2 inches in diameter) onto the prepared baking sheet. Leave space between each puff.
  7. Bake for 20-25 minutes or until golden brown and puffed. The puffs should be crispy on the outside and soft on the inside.
  8. Allow them to cool slightly before serving warm.
