Ingredients
1 medium head of cauliflower
2 large eggs
½ cup shredded cheese (cheddar, mozzarella, or Parmesan)
⅓ cup breadcrumbs (panko or regular – use gluten-free if desired)
2 tablespoons chopped fresh parsley (plus more for garnish)
2 garlic cloves, minced
¼ teaspoon onion powder
Salt and black pepper to taste
2–3 tablespoons all-purpose flour (or chickpea flour for gluten-free)
Vegetable oil or olive oil for frying
Optional Add-ins:
Pinch of red pepper flakes for heat
Lemon zest for brightness
Finely chopped scallions for an extra savory layer
Instructions
1. Wash and cut the cauliflower into small florets. Steam or microwave them until tender, about 5-7 minutes for steaming or 3-4 minutes in the microwave. Let the cauliflower cool slightly.
2. Squeeze out excess moisture from the cauliflower by placing it in a clean kitchen towel or cheesecloth and pressing gently to remove water.
3. In a large bowl, combine the grated cauliflower, eggs, cheese, breadcrumbs, parsley, garlic, onion powder, salt, pepper, and flour. Stir until fully combined and the mixture sticks together.
4. Shape the cauliflower mixture into small patties, about 2 tablespoons per fritter. Use damp hands to help form the fritters.
5. Heat 2 tablespoons of oil in a non-stick skillet over medium heat. Once hot, carefully add the fritters and cook for 3-4 minutes per side, or until golden brown and crispy.
6. Transfer the cooked fritters to a paper towel-lined plate to drain excess oil. Garnish with fresh parsley before serving.
Notes
Make-Ahead: You can prepare the cauliflower mixture ahead of time and store it in the refrigerator for up to 24 hours.
Freezing: Freeze cooked fritters for up to 3 months. Reheat in the oven or skillet.
For Extra Flavor: Add a teaspoon of smoked paprika, cumin, or fresh lemon zest to the batter.
