For the Shrimp & Seasoning:

  • 1 lb large shrimp, peeled and deveined (tails on or off)
  • 1 tbsp Cajun seasoning
  • Salt & freshly ground black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter

For the Scampi Sauce:

  • 4 garlic cloves, minced
  • ½ tsp red pepper flakes (optional)
  • ¼ cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • Juice of ½ lemon (plus zest if desired)
  • 2 tbsp unsalted butter (additional)

For the Pasta:

  • 8 oz spaghetti or linguine
  • Salt, for pasta water
  • ¼ cup reserved pasta water, as needed

To Finish:

  • 2 tbsp chopped fresh parsley
  • Extra lemon wedges, for serving
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ¼ cup of pasta water, then drain and set aside.

  2. Season the Shrimp: Pat the shrimp dry with paper towels. Toss with Cajun seasoning, salt, and pepper.

  3. Sear the Shrimp: Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 1–2 minutes on each side, until pink and slightly crisp on the edges. Remove shrimp and set aside.

  4. Make the Scampi Sauce: Lower the heat to medium. Add more butter if needed, then sauté the garlic and red pepper flakes for about 30 seconds. Add the wine and lemon juice, scraping up any browned bits. Let it simmer for 2–3 minutes.

  5. Bring It Together: Return the shrimp to the skillet along with the drained pasta. Toss to coat in the sauce, adding reserved pasta water as needed to loosen the sauce. Stir in 2 tablespoons of butter until melted.

  6. Finish and Serve: Turn off the heat. Sprinkle with chopped parsley, and adjust seasoning if needed. Serve with lemon wedges and a sprinkle of Parmesan, if desired.
