Ingredients
- 2 chicken breasts (cut into bite-sized pieces)
- 12 oz rotini pasta (or any pasta of your choice)
- 8 oz cream cheese (softened)
- 1 cup heavy cream
- 2 tbsp Cajun seasoning (adjust to taste)
- 1 ½ cups shredded cheddar cheese
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- Salt and black pepper (to taste)
- Fresh chopped parsley (optional, for garnish)

Preheat the oven to 375°F (190°C).

Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside.

Season the chicken with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet and cook the chicken pieces until browned and cooked through. Remove from the skillet and set aside.

Make the sauce: In the same skillet, sauté the garlic until fragrant. Add the cream cheese and heavy cream, stirring until the cream cheese melts and the sauce becomes smooth. Add more Cajun seasoning and mix well.
