4 soft tortillas

1 ripe avocado or 1/3 cup vegan ranch dressing

1/4 cup fresh cilantro leaves

Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. In a large bowl, toss cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and pepper.

3. Spread cauliflower on baking sheet and roast for 20–25 minutes, flipping halfway, until golden and crispy.

4. Remove from oven and toss roasted cauliflower with buffalo sauce in a clean bowl until well-coated.

5. Warm tortillas in a dry skillet over medium heat for 15–30 seconds on each side.

6. Spread avocado or ranch dressing down the center of each tortilla.
