  • 12 oz bow tie (farfalle) pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 yellow bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed
  • 3/4 cup sliced salami or pepperoni
  • 3/4 to 1 cup Italian dressing
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and rinse with cold water.
  2. While pasta is cooking, prep the vegetables and cut the mozzarella and salami.
  3. In a large mixing bowl, combine the cooled pasta with tomatoes, cucumber, bell pepper, olives, cheese, and meat.
  4. Pour in the Italian dressing and toss gently to coat. Start with 3/4 cup and add more as needed.
  5. Season with salt, pepper, and chopped parsley. Mix until well combined.
  6. Cover and refrigerate for at least 30 minutes before serving.
  7. Give it a final toss before serving and adjust seasoning or dressing if needed.
