- 2 lbs ground beef (80/20 preferred)
- 1 large onion, chopped
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 (28 oz) can diced tomatoes (with juice)
- 1 (15 oz) can tomato sauce
- 2 (15 oz) cans kidney beans, drained and rinsed
- 1 cup sweet corn (fresh, canned, or frozen)
- 3 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and black pepper to taste
- Optional toppings: sour cream, shredded cheddar, chopped jalapeños, green onions, tortilla chips
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat until fully cooked. Drain excess fat.
- Add chopped onions and bell pepper. Sauté until soft, about 5-7 minutes.
